:: Crispy Quinoa Bites Topped with Roasted Red Pepper Spread and Fresh Cilantro
Two recipes formed the basis for this dish: The Healthy Apple’s Crispy Quinoa Bites and Sailu’s Kitchen’s Roasted Red Pepper Hummus. The quinoa bites can be made either vegetarian or vegan. If desired, use chia seeds in place of eggs, and use mashed cooked butternut squash in place of cheese. Also, for health reasons, consider cutting the salt in half or avoiding it entirely.
Instead of the suggested tomato sauce for the bites, I used the roasted red pepper hummus recipe and added a small amount of water, a little at a time, until the hummus was the consistency of a thick sauce. As you might guess from the color of my sauce in the photo above, I did not roast my red peppers and instead used them fresh. Though this was not strategic on my part—I simply forgot to roast them—I did appreciate the light flavor that resulted. I also cut the olive oil by 40 percent, from 5 tablespoons to 3 tablespoons, and I added red pepper flakes for more kick.
For flavor and color, I added freshly chopped cilantro, and the dish was ready to serve.
Crispy Quinoa Bites
Makes two to four servings.
